Dominating grape in region Marco de Jerez, around proper city Jerez. Occupying around 10.201 ha (2023). Also known as: Alban, Assario, Blanco Jerez, Temprano and many many others…

Grape variety officially declared to be original to Jerez. In fact this grape probably was brought already by Phoenicians and later by Romans.

Divided in three different sub-varieties: Palomino Fino, Palomino de Jerez, Palomino Basto with Palomino Filo being the most cultivated one.

Description: Medium sized bunches with green-yellow berries of middle size, Fertile and highly productive variety.

Profile: Quiet resistant to dry conditions, Low in sugar, Low acidity, Medium ripening period.

Aromas: Neutral or light in aroma which cause more reflection of terroir in final product.

Main region: Marco de Jerez.

Other Regions: Canary Islands, Galicia, South Africa, Castilla León.

Blending: Occasionally with PX or Moscatel grape varieties.
